PRODUCTION OF PROBIOTIC COCONUT MILK KEFIR GRAIN FROM COCONUT MILK

ABSTRACT
Kefir is a probiotic fermented milk beverage. The kefir is produced by a mixture of bacteria and live active yeast. It is formulated by the using coconut milk to produced coconut milk kefir. The coconut is a highly nutritious food as it provides many health benefits. The kefir is get prepared by the inoculation of the „SCOBY” i.e. Symbiotic Culture of Bacteria and Yeast. Nutrient analysis of prepared coconut milk kefir was contain the nutrients like vitamins, protein, minerals. To make this coconut milk kefir more palatable/tasty, We can add more flavor into it. To increase its nutritional quality we can add the other nutritional components like Dryfruits, honey, fruits etc. Probiotics are preparation of live micro-organism that have beneficial effect on the health of the host.
